Step by step

Mine at the right height: copper ore generates between Y=-16 and Y=112 and is most common at Y=47-48 - normal hill and cave mining around those levels is all it takes.
Use a stone pickaxe or better: copper ore drops raw copper only with a stone pickaxe or higher; a wooden pickaxe destroys the block.
Smelt it: copper ore drops 2-5 raw copper per block (Fortune multiplies that, up to around 20 with Fortune III). Smelt raw copper in any furnace for copper ingots.
Best biome - dripstone caves: inside dripstone caves the copper blobs grow to 0-52 blocks instead of 0-16, and large copper ore veins generate bigger on average. One dripstone session can yield stacks of copper.
Hunt ore veins: above Y=0, rare ore veins mix copper ore with granite and raw copper blocks - a single vein can hold thousands of ingots.
Below Y=0 the ore becomes deepslate copper ore: same drops, slower to mine.
Know what it is for: copper tools, weapons and armor (the 2025 copper tier between stone and iron), copper golems, lightning rods, spyglasses, brushes, and a whole family of building blocks - copper blocks, grates, bulbs, doors and trapdoors.
Manage oxidation: exposed copper slowly turns from orange to green through four stages. Scrape it with an axe to revert one stage, or combine it with honeycomb to wax it and freeze the color forever.

Copper generation is identical in Java and Bedrock, including the larger dripstone-cave blobs. Both editions got the copper tool and armor tier and the copper golem in the 2025 drop.
