Harvest smart: break the bottom block of a stalk and every block above breaks and drops too. Always replant one bamboo so the patch keeps growing.
Grow your own: plant bamboo on grass, dirt, sand, moss, mud or podzol. On a random tick it has a 1/3 chance to grow, and bone meal adds 1-2 blocks instantly. It stops at 12-16 blocks tall.
