How to kill Horse

Drops 0-2 leather plus its saddle and horse armor if equipped. It never fights back, but a tamed horse is worth far more alive than as leather.

Behavior

Each horse rolls random speed, jump strength (up to about 5 blocks) and health at spawn, and foals inherit a blend of their parents stats. Taming works by temper: mount with an empty hand, get bucked off, and each attempt adds 5 temper until it beats the horse hidden threshold and hearts appear. Only tamed horses accept a saddle, horse armor and breeding. Feeding apples, wheat or hay bales raises temper and heals.

Taming and breeding

Tame by mounting repeatedly (feeding first helps). Breed two tamed horses with golden apples or golden carrots; the foal takes 20 minutes to grow, sped up with food.
