How to find Mooshroom
Mushroom fields biomes only, in herds of 4-8 on mycelium.
Spawn conditions: Red mooshrooms spawn on mycelium in mushroom fields (5% are babies). In Bedrock they spawn at light level 9 or above since 1.21.30. Brown mooshrooms never spawn naturally.

How to kill Mooshroom
Like a cow - but shearing it first gives 5 red mushrooms and turns it into a normal cow.
Behavior
Shearing drops 5 mushrooms and turns it into a cow; they do not grow back. Lightning within 4 blocks swaps red and brown. Bucket gives milk, bowl gives mushroom stew; a brown mooshroom fed a small flower gives suspicious stew on its next bowl milking. Source: minecraft.wiki Mooshroom.
Taming and breeding
Breed with wheat (not with cows). Two red mooshrooms have a 1/1024 chance of a brown baby; red x brown gives a 50% chance of either.
