How to kill Donkey

Drops 0-2 leather, plus its saddle and chest with all contents if equipped. Never fights back - and a tamed donkey is a portable chest, so keep it.

Behavior

Same temper taming as horses: mount with an empty hand, get bucked off, +5 temper each try until hearts appear. Once tamed it accepts a saddle and, uniquely, a chest that adds 15 inventory slots that travel with it. Takes half fall damage and safely falls 6 blocks. Slower and lower-jumping than most horses, but a donkey carrying a chest is the best early-game pack animal.

Taming and breeding

Tame by mounting repeatedly (feeding helps). Breed two tamed donkeys with golden apples or golden carrots; breed a tamed donkey with a tamed horse to get a mule, which is sterile.
