Step by step

Novice: buys 15 coal for 1 emerald; sells iron armor pieces - helmet 5, chestplate 9, leggings 7, boots 4 emeralds.
Apprentice: buys 4 iron ingots for 1 emerald; sells a bell for 36 emeralds and chainmail leggings and boots.
Journeyman: buys a lava bucket or a diamond for 1 emerald; sells chainmail helmet and chestplate, and a shield for 5 emeralds.
Expert: sells enchanted diamond leggings (19-33 emeralds) and enchanted diamond boots (13-27).
Master: sells enchanted diamond helmet (13-27) and enchanted diamond chestplate (21-35).
Diamond-for-emerald note: the journeyman diamond trade is a trap for your own diamonds - it exists so you can sell excess, not as a good deal.
